Fried Tomatoes

Ingredients:

3 large tomatoes
1 cup flour
1 beaten egg
1 cup 4C Plain Bread Crumbs [ or 4C Gluten Free Plain Crumbs ]
vegetable oil (enough to fill pan 1 inch up)
salt

Directions:

Wash tomatoes, cut horizontally into 1/2 inch slices. Gently remove seeds.
Dip slices lightly in flour, then egg and then dredge in 4C Bread Crumbs.
Heat oil over high heat. When very hot, place tomatoes in oil. Turn when dark golden crust forms on one side, and fry other side.
Drain on paper towels, salt to taste and serve.
Serve with ketchup or your favorite chicken dipping sauce
